Okinawa's Fish:
Although surrounded by the ocean, the islands of Okinawa have not developed a fish cuisine to compare with their pork cuisine. Fish of many kinds are caught in local waters and their vivid colors enliven the fish market. However, compared to fish from northern waters they lack flavor. Yet local fish in season are eaten with vegetables in soup dishes, crabs and shrimps are eaten in Miso soup, and fish is grilled lightly salted with island salt. Locally fresh-caught fish also go into very simple dishes like Sashimi and Tempura.
Okinawa's climate probably should be blamed for the failure of a sophisticated fish cuisine to develop. It is difficult to keep fish fresh in Okinawa's heat and humidity. "Keep it simple" seems to make for the best match between the fish caught around Okinawa and Okinawa's climate.
